Although we are still in the middle of the winter, it feels like spring every other day and that is why we felt a craving for a light and crispy curry stuffed with leafy greens and fresh flavours. And yes, we know we promised over at MAN.EAT.PLANT. never to do a bowl of green food on a white background. But given the fact that we aren’t crazy about (even our own) rules and conventions we did a delicious bowl full of green food on a light background anyway. It’s a cornflour patty (in between bread and pancake) and you can eat it with all kinds of toppings like avocado, vegan cheese and plant meat. We made this avo-carnitas variety which is utterly delicious! You can use our pulled mushroom or pulled jackfruit recipe, both are delicious!

This baby was one of the first recipes we posted on this blog. And one loved by many, so we felt it was time for a repost in case you have missed it. This raised veg pie is a classie English hot-water-dough fort loaded with a juicy filling of savory vegetables, shrooms and crispy tofu. Just perfect when served with mashed potato and/or a green salad. A good glass of dark beer would be nice too. We are really getting in the mood for savory and sweet pies at the moment ’cause this coming Monday we will start shooting for the best vegan baking book this world has ever seen ;-). One of the most familiar snacks in The Netherlands are kroketten; filled with a roux and crusted on the outside. Traditionally made with animal flesh. However we of course made them future proof and cruelty free, enriched with the magestically celeriac and king oyster shrooms! Maartje’s nan used to make kroketten on New Year’s eve, because we Dutchies are already frying oliebollen and appelflappen, so it’s easy to just let a couple of kroketten sink in the frying pan as well.
